Health should be a matter important to everyone, especially us gluten intolerants. Because we cannot eat wheat, rye, barley or oats, we must be particularly careful watching what we eat. I don’t say this solely because we miss out on essential nutrients found in gluten products, but because specially-made gluten free goodies made to represent ‘normal’ foods—such as pizza, breads, cookies—are usually higher in calories! Why must they do this to us? People are always saying: “ohh a gluten-free diet, well you must be really healthy.” The normies (a.k.a gluten-eaters) think because we don’t eat wheat, rye and barely we miss out on all those carbohydrates and extra calories. Unfortunately for us, that’s not the case.

I just did a random search for a gluten-free cookie vs. a normal cookie. (note this is probably not a legitimate comparison but I felt like making my point with numbers)
1 chocolate chip cookie: 78 calories
1 gluten free chocolate chip cookie: 150 calories
The point is, now that you are on a gluten free diet, you think that’s all there is to it, right? Moderation is a word I have to remind myself of everyday. Once you find the really good gluten free foods you will naturally want to gorge on them because you are getting the satisfaction of eating good food again. At least that’s how it went for me. The good news is that you are over the toughest part; you’ve successfully eliminated gluten from your diet. You just need to teach yourself moderation and then you’re golden!
